🍢🍋🔥 Chicken Souvlaki (Skewers for 60 People)


Ingredients:

  • 6 kg boneless chicken thighs or breast, cut into 2.5 cm cubes

  • 2 cups olive oil

  • 1½ cups fresh lemon juice

  • 10 garlic cloves, minced

  • 6 tbsp dried oregano

  • 2 tbsp salt

  • 1 tbsp black pepper

  • Optional: 3 tbsp paprika

Instructions:

  1. Marinate:
    In a very large bowl or container, combine olive oil, lemon juice, garlic, oregano, salt, pepper (and paprika if using). Add chicken pieces and toss well. Cover and marinate for 4+ hours or overnight.

  2. Assemble Skewers:
    Thread marinated chicken onto soaked wooden skewers (optional: add a piece of red pepper or onion between).

  3. Cook:

    • Grill: Medium-high heat, 10–12 mins, turning halfway.

    • Oven: Bake at 200°C (390°F) for 20–25 mins, turning once for even browning.

  4. Serve hot with lemon wedges and tzatziki on the side.
