Cheesy Cornish Vegetable Pasties

Ingredients:

  • 3 large potatoes, peeled and diced
  • 150 grams of mature cheddar cheese, cubed
  • 1 small onion, finely chopped
  • 2 teaspoons mustard seeds
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dill
  • 2 tablespoons butter
  • 1 pack (500g) of shortcrust pastry (ready-to-roll)

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

  2. Boil the diced potatoes in a pot of salted water until they are tender but not mushy, about 10-15 minutes. Drain and set aside to cool slightly.

  3. In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and mustard seeds. Sauté until the onions are soft and translucent, and the mustard seeds are fragrant, about 5 minutes. Remove from heat and set aside to cool slightly.

  4. In a large mixing bowl, combine the cooked potatoes, grated cheddar cheese, sautéed onions with mustard seeds, onion powder, garlic powder, and dill.

  5. Roll out the shortcrust pastry on a floured surface to about 3-mm thick. Using a round cutter or a small plate as a guide, cut out circles of pastry, roughly 15-20cm in diameter.

  6. Place a generous spoonful of the potato and cheese mixture onto one half of each pastry circle, leaving a border around the edge.

  7. Fold the pastry over the filling to create a half-moon shape and press the edges firmly together to seal. You can use a fork to crimp the edges for a decorative finish.

  8. Place the assembled pasties onto the prepared baking tray.

  9. Brush the tops of the pasties with a little beaten egg or milk for a golden finish (optional).
  10. Bake in the preheated oven for 30-35 minutes, or until the pasties are golden brown and crispy.
