Roast Chicken with Lemon, Garlic & Thyme

Time: ~2 hrs (incl. resting)


Ingredients

Chicken

  • 1.6kg whole chicken
  • ½ lemon
  • Thyme (+ 4 bay leaves
  • 2 onions (halved)
  • 5 garlic cloves
  • 1 tbsp olive oil

Potatoes

  • 5 garlic cloves
  • Fresh herbs (thyme/rosemary)
  • 4 tbsp olive oil

Method

1. Prep

  • Heat oven to 190°C (170°C fan).
  • Season chicken inside and out.
  • Stuff with lemon, herbs.

2. Tray setup

  • Slice remaining onion, add to tray with garlic + herbs.
  • Place chicken breast-side down on top.
  • Rub with oil and season well.

3. Roast

  • Reduce heat to 190°C (170°C fan).
  • Cook ~1 hr 15 mins (30 mins per kg + 15 mins).
  • Turn halfway if needed.
  • Done when juices run clear.

4. Rest (A must)

  • Rest chicken 15 mins (covered).

5. Serve

  • Filet and cut chicken.
